Chicken, Hominy and Tomatillo Stew

This is healthy (mmm, I think that's the first time I've actually used that word in this blog), easy meal that is great on cold days. Except for the tomatillos, I usually have everything else on hand.


1-2 cloves garlic
1/4 cup tomatillos, about 2 larger ones
1 small onion, chopped
chicken breast or tenders, chopped into pieces
1 can diced tomatoes
1 can pinto beans, drained and rinsed
1 can hominy, drained and rinsed
salt, pepper, dried herbs

Saute onion with 1 Tbsp. oil, 5 minutes or so
Add garlic and tomatillo, saute few minutes more
Season chicken with salt and pepper,add to pan and add 3 canned ingredients
Combine, add dried herbs (whatever you have on hand), bring to boil
Reduce to low and cover. Simmer for 20 minutes, to cook chicken through
Enjoy with some warm bread!
This would also be great in the crockpot... Just throw everything in!!

That sounds yummy! And I am going to have to try the pizza rustica...we love pizza around here!

This does sound good. I have been wanting to try hominy in something--it is not often used in North Dakota.:-) (Actually I had never heard of hominy until some friends from Texas made us hominy and pork soup.)

That looks really good, but dumb question here...What is hominy? I have heard of it but never tried it.

Hominy is in the corn family. I love it! It's on the canned food aisle. They have white or yellow. It doesn't matter which one you get.

I've never bought tomatillos before---they're just little green tomatoes? Are they something completely different? I have bought hominy on occasion, but now I can't remember why. This sounds wonderful, thank you for sharing!

Tomatillos are in the tomato family, and they are look like small, green tomatoes. They are not as juicy as red tomatoes, though.
This is a good stew, even if there are some ingredients your not used to, it's also very easy- which makes it a + in my book!!
