My mom makes a cheese sauce first (which can also be used on top of broccoli), then adds it to cooked pasta and covers it in shredded sharp cheese. Bake it and you have some easy mac and cheese!!
Macaroni and Cheese
Cheese sauce:
2 Tbsp. butter
2 Tbsp. flour
1 cup whole milk
1 heaping cup of sharp cheddar cheese (sharp or extra sharp- anything less will be bland)
salt and pepper to taste
elbow macaroni or any small pasta
more shredded sharp cheddar cheese for top
Melt the butter in a saucepan.
Add the flour and stir to combineSlowly pour in the milk and stir until it thickens up. Add shredded cheese and stir until melted. Season with salt and pepper.
That's it!!!! Now you have a yummy cheese sauce to pour over vegetables,
or use it instead of Hollandaise for Eggs Benedict.
I cooked a package of medium shells and mix with the cheese sauce.
Pour into a baking dish and top generously with shredded sharp cheddar (Seriously. Use the sharp cheddar. Mild cheddar just does not have enough flavor for this dish)
Bake for 20-30 minutes, until cheese has melted.

I love mac and cheese!! I joke with Diego about it being my favorite vegetable. I'm like you though...I can have kraft or homemade and I love it...so I definitely will try this :)
Oh gosh I am with you and loving all kinds of mc n cheese! over here we can only get the off brand mac n cheese and thats only if the store carries it. I loved my homemade version I made at home with cheddar cheese. However the cheddar cheese here isnt the same and when I use shredded cheese it doesnt melt correctly.
Im going to try it this way..they have a ton of sharp cheese here!
Did you know they sell the Kraft cheese powder? I didnt until a canadain girl here had some sent over to her. It's the cheese powder in shaker form and you can shake it on popcorn or on some macaroni noodles and voila you have your own mac n cheese.
TOTALLY COMFORT FOOD, I love that you are not a "mac & cheese snob". I love your recipe, I've used it for years!! Recently I've discovered that you can add a couple teaspoons of chicken bullion granules and it gives it a very nice flavor.
