Cool blog! I'd never heard of twice-baked sweet potatoes before.
In case you don't have Nannie Morris' English Tea Cake recipe, here it is---
Sift together 1 3/4 c. all-purpose flour,
1 1/2 tsp. double-acting baking powder,
1/4 tsp. salt
Mix until creamy 1/4 c. soft shortening,
1/4 c. butter or margarine,
3/4 c. sugar
1 egg
Add flour mixture to creamed mixture then add 3 TBS. milk and mix well.
Refrigerate until dough is easily handled.
Start heating oven to 400 F.
Roll dough into ball the size of walnuts.
Dip tops in 1 egg white and granulated sugar.
Bake on greased cookie sheet 12-15 minutes.
Makes about 3 dozen.
I haven't made these in a long time and kept the recipe out when I ran across it recently. I'm planning to make it after we eat up the biscuits and breakfast cookies.

This is great...I may start one too. Tonight I am making Mediterranean stuffed chicken breasts and couscous cakes. I will let you know how it works out.
